Easy Red Lentil Dahl
Ingredients
1 cup red split lentils
½ onion diced
1 tbsp ghee
1/2 tsp minced ginger
1/2 tsp minced garlic
2 cups vegetable stock
1/2 cup canned diced tomatoes
1/2 cup coconut milk
1/2 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp coriander powder
1 tsp coconut sugar
1/2 lime
Cooked rice of your choice
Instructions
- Sauté the onion, minced ginger and garlic with ghee in a saucepan on medium heat until onions are translucent. Once onions are translucent add in the dried spices and cook until aromatic.
- Add in the red lentils and vegetable stock and cook covered for 5-10 minutes or until the liquid has been absorbed.
- Pour in diced tomatoes, coconut milk and coconut sugar and cook for a further 5-10 minutes.
- Squeeze ½ lime juice into the dahl and stir thoroughly.
- Serve with cooked rice of your choice, flatbreads and top with yoghurt
