Easy Red Lentil Dahl

Ingredients

1 cup red split lentils
½ onion diced
1 tbsp ghee
1/2 tsp minced ginger
1/2 tsp minced garlic
2 cups vegetable stock
1/2 cup canned diced tomatoes
1/2 cup coconut milk
1/2 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp coriander powder
1 tsp coconut sugar
1/2 lime
Cooked rice of your choice

Instructions

  1. Sauté the onion, minced ginger and garlic with ghee in a saucepan on medium heat until onions are translucent. Once onions are translucent add in the dried spices and cook until aromatic.
  2. Add in the red lentils and vegetable stock and cook covered for 5-10 minutes or until the liquid has been absorbed.
  3. Pour in diced tomatoes, coconut milk and coconut sugar and cook for a further 5-10 minutes.
  4. Squeeze ½ lime juice into the dahl and stir thoroughly.
  5. Serve with cooked rice of your choice, flatbreads and top with yoghurt
