Indian Masala Pasta

Ingredients

1 can diced Tomatoes
1/2 cup chopped Capsicum
1/2 cup chopped Carrot
2-3 cloves of Garlic
1/3 cup diced Onion
1 tsp Garam Masala
1 tsp Chilli Paste
2 cups cooked Pasta
1/3 cup chopped Coriander Leaves
Extra Virgin Olive Oil for cooking

Instructions

  1. Heat a pan and add olive oil.
  2. Saute garlic and onion until caramelised.
  3. Add in diced tomatoes and stir to combine.
  4. Add capsicum and carrot and cook until vegetables are cooked through.
  5. Add garam masala and chilli paste and stir.
  6. Add in cooked pasta and toss through.
  7. Take off heat and stir through coriander leaves. Serve with protein of your choice.
