Strawberry & Beet Chia Pudding with Fragrant Berry Smoothie

Ingredients

For the Chia Pudding
5 Strawberries
2 cups Nut or Coconut milk
1 tbsp Maple Syrup or Agave Syrup
1-2 tsp Beetroot Powder (Add açai or maqui powder or any superfood you like)
3 1/2 tbsp Chia Seeds

For the Smoothie
1 1/2 cup Frozen Mango
2 cups Frozen Strawberries
2 cup Frozen Mixed Berries
1 tsp Orange Blossom Water or 3-4 drops Orange Essential Oil
1/2 cup Milk (We recommend Oat Milk, Coconut Milk or Soy Milk)

Instructions

  1. Prepare the chia pudding the night before by blending the strawberries, milk, maple and beet powder.

  2. Add to a bowl and whisk in the chia seeds.
  3. Wait 10 mins and whisk again before covering and adding to the fridge to set.
  4. In the morning prepare the fresh smoothie by blending all ingredients until smooth adding a little extra liquid if needed.
  5. Add some smoothie to the bottom of your bowl or glass, then some chia pudding and then top with more smoothie.
