Salmon with Spaghetti and Rocket

Ingredients

175g jar Good Fish salmon in Extra Virgin Olive Oil
300g spaghetti of your choice
2 tablespoons extra virgin olive oil
1 cup rocket
1/2 cup parsley
1 clove garlic
Juice of one lemon
Sea salt
Pepper
Parsley, extra, to serve

    Instructions

    1. Heat the olive oil and stir in finely chopped garlic and parsley.
    2. Cook for one minute or until garlic becomes fragrant. Add the fish and warm through without tearing the flesh of the fish. Set aside.
    3. Cook penne according to instructions until al dente. Drain and place on warmed serving dish.
    4. Stir through sauce, rocket and lemon juice.
    5. Season with salt and pepper to taste. Sprinkle with additional chopped parsley to serve.
