Salmon with Spaghetti and Rocket

Ingredients
175g jar Good Fish salmon in Extra Virgin Olive Oil
300g spaghetti of your choice
2 tablespoons extra virgin olive oil
1 cup rocket
1/2 cup parsley
1 clove garlic
Juice of one lemon
Sea salt
Pepper
Parsley, extra, to serve

Instructions
- Heat the olive oil and stir in finely chopped garlic and parsley.
- Cook for one minute or until garlic becomes fragrant. Add the fish and warm through without tearing the flesh of the fish. Set aside.
- Cook penne according to instructions until al dente. Drain and place on warmed serving dish.
- Stir through sauce, rocket and lemon juice.
- Season with salt and pepper to taste. Sprinkle with additional chopped parsley to serve.
