Lentil Bolognese
Ingredients
1 cup Red Lentils Uncooked
1-2 bunches Scoop Spaghetti
1 Brown Onion
150g Mushrooms
1 Carrot
1-2 Cloves of Garlic
2 tsp Mixed Herbs
1 jar Scoop Napolitana Sauce
Olive Oil for cooking
Salt & pepper to taste

Instructions

Soak your lentils overnight in some water and a pinch of salt (you can skip this step but it does help shorten the cooking time).
- Dice the onion, mushrooms, and carrot and set aside. In a pan on medium heat add your olive oil, garlic, and onion and saute until the onions are translucent.
- Add in the vegetables and saute until cooked through. Pour in your Scoop Napolitana, lentils, and mixed herbs, and cook for 15-20 minutes until the lentils are cooked through.
- In the meantime cook the pasta by boiling for 8-10 minutes. Pour the pasta into the Lentil Bolognese mixture and stir through. Serve with parmesan cheese and enjoy!
