Lentil Bolognese

Ingredients

1 cup Red Lentils Uncooked
1-2 bunches Scoop Spaghetti
1 Brown Onion
150g Mushrooms
1 Carrot
1-2 Cloves of Garlic
2 tsp Mixed Herbs
1 jar Scoop Napolitana Sauce
Olive Oil for cooking
Salt & pepper to taste

    Instructions

    1. Soak your lentils overnight in some water and a pinch of salt (you can skip this step but it does help shorten the cooking time).

    2. Dice the onion, mushrooms, and carrot and set aside. In a pan on medium heat add your olive oil, garlic, and onion and saute until the onions are translucent.
    3. Add in the vegetables and saute until cooked through. Pour in your Scoop Napolitana, lentils, and mixed herbs, and cook for 15-20 minutes until the lentils are cooked through.
    4. In the meantime cook the pasta by boiling for 8-10 minutes. Pour the pasta into the Lentil Bolognese mixture and stir through. Serve with parmesan cheese and enjoy!
