Indian Masala Pasta

Ingredients
1 can diced Tomatoes
1/2 cup chopped Capsicum
1/2 cup chopped Carrot
2-3 cloves of Garlic
1/3 cup diced Onion
1 tsp Garam Masala
1 tsp Chilli Paste
2 cups cooked Pasta
1/3 cup chopped Coriander Leaves
Extra Virgin Olive Oil for cooking
1/2 cup chopped Capsicum
1/2 cup chopped Carrot
2-3 cloves of Garlic
1/3 cup diced Onion
1 tsp Garam Masala
1 tsp Chilli Paste
2 cups cooked Pasta
1/3 cup chopped Coriander Leaves
Extra Virgin Olive Oil for cooking
Instructions
- Heat a pan and add olive oil.
- Saute garlic and onion until caramelised.
- Add in diced tomatoes and stir to combine.
- Add capsicum and carrot and cook until vegetables are cooked through.
- Add garam masala and chilli paste and stir.
- Add in cooked pasta and toss through.
- Take off heat and stir through coriander leaves. Serve with protein of your choice.
