Gingernut Cookies

Ingredients

1 1/2 cups Rolled Oats
1/2 cup Shredded Coconut
1/2 cup Almond Meal
1 tsp Ground Cinnamon
1 1/2 - 2 tsp Ground Ginger
3 1/2 tbsp Coconut Oil
2 tbsp Manuka Honey
1 tsp Vanilla Extract

Instructions

  1. Preheat oven to 150°C Combine oats, coconut, almond meal, ginger & cinnamon in a blender or food processor.
  2. Add the oil, honey & vanilla and blend until combined (about 10-15 second) Spoon out tablespoons of the mixture, roll into balls and flatten on a lined baking tray.
  3. Bake for 20 minutes or until golden on the outside Let cookies cool and drizzle with melted dark chocolate. Store in an airtight container in the fridge.
