Gingernut Cookies

Ingredients
1 1/2 cups Rolled Oats
1/2 cup Shredded Coconut
1/2 cup Almond Meal
1 tsp Ground Cinnamon
1 1/2 - 2 tsp Ground Ginger
3 1/2 tbsp Coconut Oil
2 tbsp Manuka Honey
1 tsp Vanilla Extract
Instructions
- Preheat oven to 150°C Combine oats, coconut, almond meal, ginger & cinnamon in a blender or food processor.
- Add the oil, honey & vanilla and blend until combined (about 10-15 second) Spoon out tablespoons of the mixture, roll into balls and flatten on a lined baking tray.
- Bake for 20 minutes or until golden on the outside Let cookies cool and drizzle with melted dark chocolate. Store in an airtight container in the fridge.
