Fluffy Beetroot Pancakes
Ingredients
1 cup Buckwheat Flour
1 cup Nut Milk
1 free Range Egg/ Chia Egg
1/4 cup Maple or Coconut Sugar
1/2 cup Coconut Yoghurt
3 tbsp Beetroot Powder
2 tsp Cinnamon Powder
1 1/2 tsp Vanilla Extract
Serve with: Fresh Fruit, Coconut Yoghurt, Nut Butter and Maple Syrup
Instructions
- Blend all ingredients until smooth. Heat non stock pan to medium-high and pour in circles.
- Flip when one side is cooked approx 30 seconds. Try not to overcook in order to keep them light and fluffy. Serve with anything you like.
