Crispy Jackfruit Tortillas

Ingredients

2 cans Organic BPA free Jackfruit
1/2 tsp Smoked Paprika
1 tsp Taco Seasoning
1/2 tsp Garlic Powder
1/2 tsp Ground Cumin
1/4 tsp Chilli Flakes
1 small bunch chopped Coriander Stalks + Leaves to garnish
1/4 tsp Ground Coriander
2 chopped Spring Onions
1/2 tbsp Honey or Coconut Nectar
1 tbsp Coconut Aminos or Coconut Sweet Chilli
your favourite Tacos or Tortillas
1 small chopped Mango
Pickles of your choice
1 Avocado
1 large sliced Red Chilli
1 Lime to serve

Instructions

  1. Start by adding your spices, coriander stalks and spring onion to a pan on medium heat with a good amount of olive oil.
  2. Fry gently until fragrant then add your jackfruit and cook gently for approx 15-20 mins until soft and tender.
  3. Then add the coconut coconut sweet chilli and honey and stir in creating a nice caramelisation.
  4. Next heat your tacos or tortillas and once hot, serve with your tacos, diced mango, chopped pickles, sliced avo, sliced red chilli, coriander and a squeeze of lime.
