Creamy Herbed Mushrooms & Spinach
Ingredients
1 finely chopped Onion
500g chopped Mixed Mushrooms
3 tbsp Olive Oil
8 Garlic cloves sliced
4 handfuls of baby Spinach
4 tbsp natural Coconut Yogurt
4 tbsp chopped Parsley
2 tbsp chopped Sage and/or 4 sprigs Fresh Thyme
the juice of 1 Lemon
2 slices of your favourite Bread
500g chopped Mixed Mushrooms
3 tbsp Olive Oil
8 Garlic cloves sliced
4 handfuls of baby Spinach
4 tbsp natural Coconut Yogurt
4 tbsp chopped Parsley
2 tbsp chopped Sage and/or 4 sprigs Fresh Thyme
the juice of 1 Lemon
2 slices of your favourite Bread
Instructions

Start by heating non stick fry pan on medium heat.
- Add olive oil, onion and garlic and cook until soft.
- Add chopped herbs and mushrooms and season well.
- Cook until mushrooms are golden, adding a little more olive oil of needed.
- Next add spinach and cook until wilted.
- Prepare anything else you will be serving at this moment by turning heat to low.
- Before serving add the yoghurt, lemon juice, a splash of water if needed and season to taste. You can also add some fresh thyme and parsley to garnish and serve with 1/2 an avocado and gluten free toast.
