Choc Chip Tigernut Cookies

Ingredients
1 1/2 cup Tigernut Flour
1/2 cup Coconut Oil
1/3 cup Coconut Sugar
1 tsp Vanilla Essence
1 organic Egg
1 tsp Baking Powder
1/2 tsp Fine Himalayan Salt
1/2 cup Chopped Dark Chocolate
Instructions
- Preheat oven to 175C. Whisk the semi melted coconut oil, coconut sugar, egg and vanilla until creamy and combined.
- Add tigernut flour, baking powder and sea salt and mix well.
- Fold in the chopped dark chocolate or chips.
- Roll dough into golf ball size, then flatten on a lined baking tray into cookie shapes.
- Bake for 10-12 mins until slightly golden. Allow the cookies to cool for 10 mins on tray before transferring to a cooling rack.
