Black Sesame Banana Bread
Ingredients
5 over Ripe Bananas
2 free range Eggs or Chia Eggs (1 tbsp Chia with 3 tbs warm Water let sit for 5 mins, per 1 Egg)
165g gluten free Plain Flour
65g Black Sesame Flour
50g Coconut, Rapadura, or Maple Sugar
1/2 cup Olive Oil
1 tsp Vanilla Extract
1 tsp ground Cinnamon
1/2 tsp ground Nutmeg
2 1/2 tsp Baking Powder
1/4 tsp Fine Himalayan Salt

65g Black Sesame Flour

1/2 cup Olive Oil

2 1/2 tsp Baking Powder
1/4 tsp Fine Himalayan Salt
Instructions
- First preheat oven to 180C and line a loaf tin.
- Blend the bananas and eggs until well combined.
- Add gf flour, black sesame flour, coconut sugar, olive oil, vanilla extract, baking powder, cinnamon, nutmeg and Himalayan salt.
- Blend on high for approx 2 mins until nice and smooth.
- Then pour into your lined tin, top with whatever you like such as a sliced banana, cacao nibs, wattleseed or shredded coconut and bake for 40 mins until skewer comes out clean. Allow to cool on wire rack. Enjoy fresh or toasted.
