Quick Soba Noodles & Greens
Ingredients
For the base
70g Soba Noddles (Buckwheat Noodles for paleo diets)
1 free range Egg (can also use Tempe, Chicken or Wild Salmon)
1 handful of Peas
Greens of your choice: Asparagus, Broccoli, Snow Peas
1 handful of Spinach
1 Spring Onion
Sesame Seeds, Avocado, Coriander, and chopped Tamari Almonds to serve
For the sauce
2 tbsp Olive Oil
1 tsp Sesame Oil
2 tbsp Tamari
2 tbsp Mirin
1-2 tsp Honey, Maple Syrup, or Coconut Sugar
1 pinch Chilli Flakes
2cm peice of grated Ginger
1 crushed clove of Garlic
Instructions
- Cook your egg until soft or hard boiled, however you prefer it. Then cook soba according to instructions.
- 1 minute before they are done, throw in the peas and greens, but not the spinach, and blanch.
- Strain everything and rinse.
- Peel you egg and prepare your sauce by stirring all ingredients together.
- Dress your noodles and greens with the sauce and fresh spinach.
- Top with your egg, sesame and crushed tamari almonds or garnishes of your choice.
