Green Detox Soup
Ingredients
2 tbsp Olive Oil
2 Leeks (white part only)
2 Garlic cloves
2 Zucchinis
1 small Celeriac
2 Celery sticks
3 cups chopped Kale
1 head of Broccoli
750ml Organic Chicken Bone Broth (of Vegetable Stock)
1/4 cup Parsley
Coconut Yoghurt (optional)
Instructions

Saute leeks in olive oil, then add garlic and cook for a couple of minutes before adding the rest of the chopped veggies and season.
- Cook until starting to soften, then add the broth/stock and simmer for approx 20 mins or until all the vegetables are soft.
- Blend until smooth. Serve with a small dollop of coconut yoghurt if you like and some salt and pepper. You can also have it with some crunchy toast of your choice.
