Mango Sago Pudding

Ingredients

1/2 cup Tapioca Pearls
1/2 cup Coconut Cream + 2 tsp
2 tsp Liquid Sweetener (Honey, Maple Syrup or Agave)
1 tsp Vanilla Extract
70g Dried Mango
Coconut Flakes to top

    Instructions

    1. Overnight soak your mango in some water to rehydrate it (leave aside 1-2 slices to garnish).
    2. Bring a pot of water to a boil and cook your tapioca until clear. Drain the tapioca and rinse with cold water.
    3. Heat together the ½ cup coconut cream, liquid sweetener, and vanilla with the tapioca until combined.
    4. Set in the fridge for 2 hours.
    5. Pour the mango and a dash of the soaking water into a blender and combine with 2 tsp coconut cream.
    6. Layer your tapioca and mango puree into a cup. Top with dried mango and coconut flakes.
