Carrot Tacos
Ingredients
2 cups of grated Carrot
2/3 cup Tapioka Flour
2/3 cup Almond Meal
2/3 cup Water
1 tsp Garlic Powder
1/2 tsp Salt
2 tbsp Nutritional Yeast
1 tbsp grated Parmesan Cheese
Instructions

Preheat oven to 180C.
- Grate the carrots and squeeze out any extra liquid from the carrots and set aside.
- Whisk together all the remaining ingredients before adding the carrots and mixing well.
- Line 2 baking trays with baking paper. Spoon your mix onto the trays and spread into thin circles.
- Bake for 20mins, flip, and cook for a further 10 mins checking them to make sure they don’t burn. Serve hot.
