Banana & Walnut Bread

Ingredients
3 medium, ripe Bananas
¼ cup Walnut Oil / melted Coconut Oil
¼ cup pure Maple Syrup
1 Egg / flax Egg (1 tbsp flaxseed meal mixed with 2 tbsp warm water set for 10 mins)
1 teaspoon pure Vanilla Extract
1 ½ cups Oat Flour
¾ cup Walnut Meal/ Almond Meal/ Pumpkin Seed Meal/ or Black Sesame Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
¼ teaspoon Fine Himalayan Sea Salt
1 cup chopped Walnuts + extra for topping
¼ cup Walnut Oil / melted Coconut Oil

Instructions

Preheat the oven to 175C. Line a loaf pan and set aside.
- Mash bananas until smooth in bowl or food processor.
- Add oil, maple, egg and vanilla. Whisk until well incorporated.
- Add all dry ingredients and mix until just incorporated, making sure no flour patches remain.
- Fold in chopped walnuts. Pour batter evenly into prepared pan, cut a slit slightly off centre down the loaf and sprinkle with chopped walnuts, lightly pressing to secure.
- Bake for approx 55-65 mins or until toothpick comes out clean.
