Organic Matcha Muffins Grain Free 295G

Product Description

These delicious muffins can’t be easier to make and are formulated with the most nourishing whole-food ingredients. What we love most about these grain-free treats is that they contain one of our favourite superfood ingredients, tiger nuts. Tigernuts are actually a grass-root, containing one of the highest known sources of resistant starch. This is a prebiotic fibre that is not fully digested by the gut, allowing it to nourish your gut bacteria instead. Matcha green tea is both a delicious and popular flavour for sweet treats and is one of the highest known sources of antioxidants adding yet another superfood to these yummy muffins.

Instructions

You will need: 2 eggs, 1/4 cup + 2 tbsp coconut oil/ghee/butter, 1/2 cup milk of choice, 1 tsp vanilla extract

Preheat oven to 200° celsius. Tip contents of packet into a mixing bowl and remove any lumps by pressing down on them with the back of a spoon. Gently melt oil, ghee or butter making sure that it is not too hot, and add to a seperate bowl or jug. Add eggs and vanilla and whisk well to combine before adding the milk and whisking again. If possible, use milk that is not too cold as it may casue oil to solidify. If this happens place bowl in a sink of warm water to help gently melt the oil and whisk well to combine. Add wet ingredients to dry ingrednits and mix well to form your batter. Add 10 muffin cups to your muffin tray and divide mixture evenly. Bake for 15 minutes in the middle of the oven. Muffins are cooked when skewer comes out clean.

Cooking Ideas

  1. For a delicious and easy matcha icing mix well until smooth 225g cream cheese or vegan cream cheese, 2-3tsp matcha powder, 1 tsp vanilla paste and 6 tbsp icing sugar.
  2. For some extra decadence try adding white chocolate or vagan white chocolate chips into your mix.
  3. For a vegan friendly alternative use 2 chia or flax eggs to make your muffins. Simply mix 2 tbsp chia seeds or flaxseed/linseed meal with 6 tbsp water. Set mix aside for 10 mins, allowing the seeds to absorb the water. Simply use this instead of the eggs in the recipe.

Due to this product containing matcha powder, it is not recommended for children due to the natural caffeine confent.
