Agar-agar is a colourless, odorless mucilage which can be used to texture savory or sweet dishes (aspic, terrine, dessert, cream, jelly, etc.). It advantageously replaces gelatin because it is 100% vegetable. It also allows the production of gelled waters and the gelation of any type of liquid.
