Sourcing fresh ripe pomegranates from north-western New South Wales, the fruit is hand squeezed, strained, and blended with spices including cinnamon, black pepper, star anise, cloves and local cane sugar. Cooked long and slow to concentrate the juice into a molasses texture showing deep dark mahogany color, fabulous fruit and spice integration and balanced acidity.

Use with cured meats, pizza, cheese, any meats from a BBQ or oven roasted. It’s wonderful as a drizzle over fresh fruits like strawberries and melon.
