Tomato & Chickpea Bruschetta
1 large Tomato diced
1/3 Cucumber diced
1/2 cup Cooked Chickpeas
1 cup chopped Parsley
3 tbsp Extra Virgin Olive Oil + extra for cooking
Regular or Vegan Mayonnaise to spread
Salt and Pepper to taste
Optional: Goats Cheese/Feta
- Mix together in a bowl the tomato, cucumber, chickpeas and parsley with olive oil and salt + pepper.
- Slice the baguette into 4 pieces and cut those in half lengthwise. Toast in a pan with olive oil until golden.
- Spread the mayonnaise on both slices of bread.
- Top with 2-3 spoonfuls of the chickpea mix. Optional to crumble over goats cheese/feta.
