Easy Peasy Pickles

Ingredients
Pickling spice mix
1 1/2 tbsp Celery Seeds
1 crushed Cinnamon Quill
1 tbsp Yellow Mustard Seeds
2 crushed Bay Leaves
1 tbsp Black Mustard Seeds
1/2 tsp Whole Cloves
1 1/2 tbsp Coriander Seeds
1 tsp Dried Ginger pieces
1/2 tsp Chilli Flakes
2 tsp Black Peppercorns
2 tsp Mixed Peppercorns
1/2 tsp Fennel Seeds
1 tsp Juniper Berries
1 1/2 tbsp Celery Seeds

Pickle ingredients
4 small Cucumbers
3/4 cup White Balsamic or White Vinegar
1 1/2 cups Filtered Water
1 tbsp Fine Himalayan Salt
2 cloves of Garlic
1 heaped tsp of Pickling Spice Mix
Instructions
- Whisk together the salt and vinegar in a bowl.
- Slice your cucumbers and place them in a large jar with the garlic.
- Add 1 heaped tsp of your pickling spice mix, top with the vinegar and finally the water.
- Close the lid and place in the fridge for at least 8 hours. The rest of the spice mix can be stored in a jar in the pantry for future pickles.
