Chewy Vegan Almond Cookies

Ingredients
2 cups Blanched Almond Meal
2 tbsp Almond Butter
4 tbsp Maple Syrup
2 tsp Ground Cinnamon
1 tsp Vanilla Extract
1 tbsp Wattleseed
A pinch of Himalayan Fine Salt
2 tbsp Almond Butter

Instructions
- Preheat oven to 175 C.
- Mix all dry ingredients together; almond meal, cinnamon, salt and wattleseed.
- Then add the almond butter, vanilla and maple syrup and mix together well with your hands.
- Roll into balls then flatten into cookie shape. They won’t change shape in the oven. If making 6 large cookies bake for 12-14 mins, or if you make smaller ones cook for less time.
- Then allow to cool on the baking tray for at least 10 mins before transferring to a wire rack. Enjoy as they are or use to make ice cream sandwiches!
